This week’s recipe comes from Complete Healthy Cookbook by Jean Carper which is the book I used when I learned to cook!!! It’s a fantastic cookbook, filled with healthy recipes and with little notes that tell you why each recipe is nutritionally good for you. Most of the recipes turned out well – there were a few duffs, but this book basically taught me to cook and to love cooking!!!
This is a really good salad recipe, especially for spinach which sometimes gets a little dull, don’t you think? The curry dressing is especially good. It claims to be non-fat, which it really is, but it does contain honey…so nothing’s perfect!!! It’s a lovely salad for sunny weather – I’ve made it twice this week in the June heatwave!!!
You can substitute the berries with any kind of berry you have on hand. I’ve made it with just raspberries and then with raspberries and strawberries. But I’ll give the original recipe suggestions.This serves 3 people.
3 cups Spinach, torn into bite size pieces
1/2 cup Strawberries
1/2 cup Blueberries or Raspberries
1/2 red onion, finely diced.
1/4 cup nuts ( Pecans or cashew nuts)
For the dressing:
1 tbsp Balsamic Vinegar
1/2 tbsp Rice wine vinegar
1/2 tsp curry powder
3/4 tbsp honey
1 tsp Dijon mustard
Salt and pepper
Whisk together the dressing ingredients. Add to the spinach and toss lightly. (I’d do this gradually, check it tastes good to you and you don’t add too much too soon). Once you’re happy with the leaves, add the berries and the exciting stuff.
